PEANUT BUTTER PANCAKES

2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 tablespoon sugar
1 teaspoon salt
8 slices bacon, fried and crumbled
2 eggs, beaten
1 3/4 cups milk*
3 tablespoons oil
1/2 cup chunky peanut butter
FOR SERVING:
Softened butter or margarine
strawberry preserves, honey or maple syrup

In large bowl, mix flour, baking powder, sugar and salt. Fold in crumbled bacon.

In another mixing bowl, blend eggs, milk, oil and Natural peanut butter until smooth. Stir into flour mixture until smooth.

Spoon quarter cupfuls onto lightly greased preheated 375 degrees F griddle. Cook until edges look dry. Turn and cook second side.

Serve pancakes topped with butter and a choice of Strawberry Preserves, honey or maple syrup.

Makes 16 to 20 thick pancakes
