MASTERFUL PIMIENTO CHEESE, SOUTHERN STYLE

1 pound sharp cheddar cheese
1/2 medium-size sweet onion, coarsely chopped
1 large clove garlic, cut into quarters
2/3 cup mayonnaise
1 1/2 teaspoon Dijon mustard
1 (4-ounce) jar chopped pimientos, drained
Dash of cayenne pepper
Salt and freshly ground black pepper to taste

Shred or grade cheese to medium-chunky texture and place in large bowl.

Put onion and garlic through food grinder or food processor and stir into cheese. Stir in mayonnaise, mustard, pimientos and cayenne pepper. Add salt and pepper.

Cover mixture tightly and refrigerate for at least 8 hours or overnight to let flavors blend.

Note: This can be prepared up to 3 days in advance. Keep refrigerated in airtight container.

Makes 6-8 servings
