APPLE, CHERRY, DRIED APRICOT AND RICE DRESSING1 1/2 cups cooked basmati rice
2 cups dry whole-wheat bread cubes
1 large onion, coarsely chopped
1 cup chopped celery
2 large Jonathan apples (about 4 cups), cored and roughly chopped
1/4 cup dried tart cherries
1/2 cup coarsely chopped dried apricots
1 cup pecans
1/4 cup canola oil
2 cups chicken or turkey broth, plus more to moisten
Grease a 9-by-13-inch baking dish. Preheat oven to 350 degrees F.
In a large mixing bowl, combine rice, bread, onion, celery, apples, cherries, apricots and pecans. Add oil and 2 cups broth to moisten. Stir until well mixed. Stuffing should be moist. (Add more broth 1/4 cup at a time, if needed.) Spoon mixture into prepared baking dish.
Bake 50 to 60 minutes or until the stuffing is golden brown.
