Chicken and Rice Salad
5 large boneless skinless chicken breast, boiled 1 tablespoon parsley 2 cups rice, instant 1 cup pecans, finely chopped 1 1/2 cups celery, finely chopped 1 small onion, finely chopped 3 green onions, whole, finely chopped 6 eggs, hard-boiled, grated 1 can cream of mushroom soup 1/2 cup mayonnaise, or to taste salt and pepper, to taste
Cook rice according to package directions. Chop chicken into bite-size pieces. Combine all ingredients and mix well. Chill and serve over bed of lettuce. |
