GOLDEN CRUST ZUCCHINI RING
3 cups sifted flour 3 cups sugar 2 teaspoons baking powder 1 teaspoon baking soda 11/2 teaspoons ground cinnamon 1/2 teaspoon salt 4 eggs 1/2 cup oil 3 cups zucchini, cut in 1-inch cubes 1 cup whole shelled walnuts or pecans
Sift dry ingredients into large mixer bowl; set aside.
Put eggs, oil and zucchini into Osterizer blender container. Cover and process 3 cycles at GRIND or until finely chopped. Add to dry ingredients, mix with electric mixer until well mixed. Stir in nuts. Pour into well-greased 12-cup, fluted tube pan.
Bake in a preheated 300 degree F oven until done, about 1 1/2 hours. Let cool 10 minutes; remove from pan and cool on wire rack.
