Cottage Cheese Salad
1 (20 oz.) can crushed pineapple, drain and reserve juice 1 (3 oz.) package any flavor Jell-o 1 (11 oz.) can mandarin oranges 1/2 cup chopped maraschino cherries 2 cups small curd cottage cheese
Measure juice from pineapple and add enough water to make 1 cup of liquid. Place liquid in saucepan and heat to boiling.
While pineapple liquid is heating, in a large bowl, use a fork to combine crushed pineapple, mandarin oranges, marashino cherries, and cottage cheese.
When pineapple liquid had begun to boil, remove from heat and add Jell-o, stirring until it is dissolved. Add 1 cup of cold water, stir, and pour into cottage cheese mixture. Mix with fork, cover, and chill for at least 4 hours until set.
