BEST RICE KUGEL
1 cup sugar 1/4 cup vegetable oil 1 teaspoon grated lemon peel 1/2 teaspoon ground cinnamon 1/2 teaspoon vanilla extract 3 eggs 3 cups cooked white rice 1/2 cup raisins 1/3 cup crushed pineapple with juice 1/4 cup chopped walnuts Butter, to grease casserole
Preheat oven to 350 degrees.
Beat together sugar, oil, lemon peel, cinnamon and vanilla. Beat in eggs 1 at a time.
Stir in rice, raisins, pineapple and walnuts, combining thoroughly. Pour into a buttered casserole dish.
Bake for 1 hour or until top is golden.
May be served warm or cold.
