RED HOT TARTAR SAUCE

"Good on grilled or fried fish, or in fish tacos."

1/4 cup peeled, seeded, minced cucumber
2 tablespoons chopped sweet or dill pickle (OR 1 tablespoon of each type)
2 tablespoons minced onion
2 tablespoons minced celery
1 tablespoon minced parsley OR chives
3/4 cup mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon Frank's Red-Hot Sauce OR 1-2 teaspoons Tabasco Sauce
Salt, to taste
Pinch of white pepper

Put the minced cucumber, pickle, onion and celery in two sheets of paper towel. Press moisture out of the vegetables as much as you can. Put mixture in medium bowl. Add the parsley or chives, mayonnaise, lemon juice, hot sauce or Tabasco, salt and pepper. Stir gently. Taste for seasoning.

Cover the bowl with plastic wrap and put in the refrigerator for at least an hour.
