FISH, RICE AND BROCCOLI WITH BASIL CREAM SAUCE
1 (16 oz.) package frozen flounder, thawed and drained 1 tablespoon butter or margarine 1/3 cup chopped onion 1/2 package (8 oz.) frozen individual broccoli spears, thawed 1 (10 3/4 oz.) can Campbell’s Condensed Chicken Broth 1/2 cup heavy (whipping) cream, half and half or light cream 1/2 teaspoon dried basil 1 1/2 cups dry Minute Rice 1 tablespoon chopped fresh parsley
Carefully cut fish into 8 squares. Place butter, onion, broccoli and flounder in microwavable dish, placing broccoli on one side and fish on the other. Cover and cook at HIGH 5 minutes Rearrange fish and broccoli, moving pieces in center to the edge of the dish.
Add remaining ingredients and microwave 5 minutes, stirring after 3 minutes. Remove from oven and let stand 5 minutes. Fluff with fork.
