COFFEE CHAI4 cups milk
1/4 cup instant coffee
1/4 cup firmly packed brown sugar
2 cinnamon sticks, broken
1/4 teaspoon ground cardamom (or 2 cardamom pods)
1/8 teaspoon ground allspice
Mix all the ingredients in a large saucepan. Simmer for 5 minutes over low heat, stirring occasionally. Let stand for 10 minutes.
Strain. Pour into large cups or mugs.
COOL VARIATION: Prepare the coffee as directed and refrigerate for a cold beverage. Serve over ice.
