SPICY GREEN TOMATO BREAD
2 cups unbleached all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1/4 teaspoon allspice 1/4 teaspoon grated or ground nutmeg 2 eggs 1 cup firmly packed brown sugar 1/2 cup oil 1 teaspoon vanilla extract 1 1/2 cups shredded and drained green tomatoes 1/2 cup coarsely chopped walnuts 1/2 cup dark raisins
Preheat oven to 350 degrees F. Grease and flour a 9-by-5-inch loaf pan.
Sift together the first 8 ingredients. Set aside.
In a medium-sized bowl beat eggs, then add in the following order: brown sugar, oil and vanilla, mixing well after each.
Stir into the sugar mixture in the following order: tomatoes, flour mixture, walnuts and raisins. Turn batter into prepared pan.
Bake for 65 minutes or until wooden pick inserted in the center comes out clean. Cool in pan 5 minutes, then turn out on a wire rack to cool completely.
