Cream Cheese Rhubarb Delight Serves 6
1 cup flour 1/2 cup powdered sugar 1/2 cup butter
Mix together with pastry blender and press in bottom and up sides of 9-inch pie plate. Bake in preheated 350°F. oven for 10 minutes. Remove and cool.
FILLING 3 cups rhubarb, cut into 1" pieces 2 Tbsp. cornstarch Pinch of salt 1 1/2 cups sugar, divided 6 ozs. cream cheese 1 large egg 2/3 cup sour cream almonds and maraschino cherries for garnish
1. In 2-quart saucepan over medium heat, cook rhubarb, cornstarch, salt, and 1 cup sugar, stirring often until mixture boils and thickens.
2. Pour rhubarb mixture into crust.
3. In small bowl with mixer at medium speed, beat cream cheese, egg, and 1/2 cup sugar until smooth; pour over rhubarb mixture. Bake for 25-30 minutes until set; cool on wire rack.
4. To serve, spread sour cream on top and garnish with almonds and cherries. |
