1/2 cup cornmeal 3/4 cup boiling water 1/4 cup shortening 2 tsp. salt 1/4 cup warm water 1/4 cup light molasses or honey 1 pkg. dry yeast 2 3/4 cups sifted flour 1 egg
In a large bowl, pour boiling water over cornmeal; sir in shortening and salt. Cool to lukewarm.
Combine warm water and sweetener in a small bowl; stir in yeast until dissolved. Let mixture stand for 5 - 10 minutes, until foamy.
Add yeast and half of flour to cornmeal mixture. Beat well for two minutes; add the egg and remaining flour. Beat another minute. Dough will be very sticky. Cover dough with oiled plastic or waxed paper and let rise until doubled (about an hour).
With floured hands, punch dough down. Turn out onto floured surface and form into a rope about 18-inch long. Using a floured knife or a piece of thread or dental floss, cut rope into 18 pieces. With floured hands, shape each piece into a ball. Place 9 balls in each of two greased 8-inch round layer cake pans. Cover pans with oiled plastic or waxed paper and let rise until doubled (about an hour).
Bake at 375 degrees for about 15 minutes until golden brown. Turn out of pans to cool (this keeps the bottoms from getting soggy). Brush tops with melted butter while still hot. |
