New Orleans Cold Spaghetti (MAKE A DAY IN ADVANCE) This is great on a hot summer day.
Combine in Dutch oven or large saucepan: 6 or 7 chicken breast or 1 whole chicken water to cover 1 onion 3 stalks celery 1 clove garlic Boil chicken in water with onion, celery, and garlic. When chicken is done, strain, reserving broth, and dice up chicken.
In reserved chicken broth cook: 7 oz. thin spaghetti, drain
Dressing: 2 tablespoons white wine or champagne vinegar 2/3 cup olive oil or vegetable oil 1 teaspoon salt 1 teaspoon sugar 1 teaspoon paprika dash of Tabasco 1/4 teaspoon garlic powder Mix dressing ingredient together and put in mason jar; shake well.
Combine the diced chicken, cooked spaghetti, dressing and: 3 stalks of celery, diced 1 small bunch of green onions, chopped Hellmann's Mayonnaise (enough to bind ingredients) salt, pepper, and seasonings to taste
Refrigerate overnight. Before serving add enough Hellmann's Mayonnaise to bind. Garnish with: 2 avocados, sliced and sprinkle paprika over top. |
