My Favorite Bean Salad
2 cans red kidney beans, drained well 1/4 cup chopped fresh basil 2 Tbsp. chopped fresh parsley 1/4 cup chopped scallions 1/4 cup chopped red bell pepper 1/4 tsp. minced garlic
DRESSING: 1/3 cup extra virgin olive oil 2 tbsp. red wine vinegar (or to taste) 1/4 tsp. salt (or to taste) pinch of sugar
Mix all ingredients except ingredients for dressing. Pour well-mixed dressing over bean mixture and let marinate in fridge for at least two hours, mixing occasionally. Great for picnics!
