'Dutch Babies' Oven Pancakes

Dutch Babies are most spectacular when the batter is baked in a large container such as a paella pan. Big iron skillets and ceramic, glass or metal baking dishes also work well. Any shape may be used, but the pan should be shallow - not over 3 inches high. To figure the volume of the pan you want to use, fill it with water from a quart container. Then select the recipe to fit. Pie pans work fine for a single serving of Dutch Babies. A few gratings of whole nutmeg add flavor to the rather bland pancakes, and the taste is further enhanced by using imagination in toppings, such as whipped cream; yogurt; honey; reserves; sauteed apple, pear or banana slices; strawberries; peaches; raspberries; blueberries; applesauce or cinnamon sugar. Sausages, bacon and ham are good accompaniments. For entree Dutch Babies, serve with creamed chicken, turkey or seafood, grated cheese or a ribbon of ratatouille. emember to have the diners seated at the table when the Dutch Babies are ready to take out of the oven because loose their puffy presentation when they begin to cool.

Pan size: 3 cups
1 tbsp. butter, 1 egg, 1/4 cup milk, 1/4 cup flour
Pan size: 4 cups
1 1/2 Tbsp. butter, 2 eggs, 1/2 cup milk, 1/2 cup flour
Pan size: 2-3 qts.
1/4 cup butter, 3 eggs, 3/4 cup milk, 3/4 cup flour
Pan size: 3-4 qts.
1/3 cup butter, 4 eggs, 1 cup milk, 1 cup flour
Pan size: 4-4 1/2 qts.
1/2 cup butter, 5 eggs, 1 1/4 cups milk, 1 1/4 cups flour
Pan size: 4 1/2-5 qts.
1/2 cup butter, 6 eggs, 1 1/2 cups milk, 1 1/2 cups flour

Put butter in pan and place in a preheated 425-degree oven. While butter melts, quickly mix batter in blender or food processor. Whirl eggs at high speed for 1 minute, until light and lemony colored. With motor running, gradually pour in milk, then slowly add flour. Continue mixing for 30 seconds. Remove pan from oven and pour batter into the hot melted butter. Return to oven and bake until well-browned - 15 to 25 minutes, depending upon size of pan.
