I make different kinds of meatloaf, but here's a favorite. The texture of this is fine and solid.
1/2 pound ground pork (quite fatty) 1/2 pound ground beef (preferably as low-fat as possible) (10%) 1/2 pound ground veal (10% or so)
1/2 cup chopped onion 3 cloves minced garlic 1/2 cup diced red pepper I don't saute my veggies first
1/2 cup Italian flavored bread crumbs (Progresso) 1/4 cup grated parmaggiano cheese 1/2 cup canned/bottled spaghetti sauce without meat 2 eggs
Mix, press into pan (I bake it in a deep, rectangular glass casserole). Bake for 1/2 hour at 400F. Pull out, drain fat. Top with 1/2 cup (second half cup) of canned/bottled spaghetti sauce. Replace in oven, continue baking for 45 more minutes.
After 45 minutes, pull out, top with more parmaggiano cheese, and let rest. |
