Here's a recipe for quick, easy and tasty potato chips. Seldom do I make only one recipe, as the first batch will be.. um.. eaten before they even cool off! :)
Nonstick olive oil cooking spray (I've used the regular or butter flavored stuff too) 2 medium unpeeled red skinned potatoes 1 tbsp olive oil 2tbsp. minced fresh dill, thyme or rosemary, or 2 tsp dried dill, thyme or rosemary 1/4 tsp garlic salt 1/8 tsp black pepper 1 1/4 cup nonfat sour cream
Preheat oven to 450F. Spray large nonstick baking sheets with nonstick cooking spray, set aside.
Cut potatoes crosswise into very thin slices, about 1/16th of an inch thick. Pat dry with paper towels. Arrange potato slices in single layer on prepared baking sheets; coat potatoes with nonstick cooking spray.
3. Bake 10 minutes; turn slices over. Brush with oil. Combine dill, garlic salt and pepper in small bowl; sprinkle evenly onto potato slices. Continue baking 5 to 10 minutes or until potatoes are golden brown. Cool on baking sheets. Serve with Sour Cream.
** My favorite is the dill/garlic/pepper combination. I keep a shaker of this mixture around and put it on popcorn for a snack. Another good popcorn topping is Parmesan cheese, garlic, and pepper. |
