Green Chili Cheese Squares
Makes about 3 dozen appetizers

1 (4 oz) can chopped green chiles
1 cup shredded Monterey Jack cheese
1 cup shredded, sharp cheddar cheese
1/4 cup minced onion
1/4 cup crushed potato chips
8 eggs, slightly beaten
1/2 cup milk
Dash cayenne
Chopped cilantro or parsley

Mix chiles, cheeses, and onion; put in bottom of a well greased 8-inch square baking pan. Sprinkle crumbled chips over all. Combine eggs, milk, and cayenne; pour over chips, chiles, and cheese.

Bake in a 325 degree oven for 45-50 minutes or till set. Cool 5 minutes. Sprinkle with chopped cilantro or parsley, if desired. Cut into squares and serve with toothpicks, warm or at room temperature.
