Herbed Yogurt Cheese From: lambchopdelite Newsgroup: rec.food.recipes Makes: 1/2 cup or 2 servings
1 cup nonfat plain yogurt (made without gelatin) 1/4 cup finely chopped tomatoes 2 tbsp. minced fresh basil 1 tbsp. minced fresh dill 1 tbsp. minced fresh chives 1/4 tsp. Freshly ground black pepper
Line a fine-mesh sieve with a double thickness of cheesecloth or a coffee filter. Place the sieve over a bowl. Spoon the yogurt into the sieve. Refrigerate about 8 hours or overnight, until all the extra whey has drained from the yogurt.
Discard the liquid in the bowl. Transfer the yogurt to a small bowl. Stir in the tomatoes, basil, dill, chives and pepper. Cover and refrigerate for at least 1 hour for the flavors to blend.
Chef's note: For a beautiful presentation, place the spread in a pastry bag fitted with a medium to large star tip, Pipe the spread onto crackers, small pieces of toast (cut into fancy shapes with small cookie cutters) or vegetable slices, such as cucumber, radish, zucchini or carrot rounds.
