1/4 cup flour 1/2 tsp. ground black pepper 1/4 tsp. cayenne pepper 5 lbs. beef short ribs 2 Tbsp. oil 1 onion, chopped 1 carrot, chopped 1 celery rib, chopped 4 garlic cloves, minced 1 (28 oz.) can crushed tomatoes 1 cup beef broth 2 Tbsp. tomato paste 1 tsp. oregano 1/2 tsp. salt 1 Tbsp. chopped fresh parsley 1 tsp. ground coriander
Combine flour, salt, black pepper and cayenne and dredge ribs in mixture. Set aside.
Brown the ribs in oil, drain and set aside. In the same oil and skillet, saute the onion, celery and carrot till onion is translucent. Add the minced garlic and cook for another 3 minutes. Transfer the onion mixture to a large pot, add the ribs, crushed tomatoes and the rest of the ingredients. Mix well, and taste to adjust seasonings to your liking. Cover and simmer for about 2 hours till ribs are nice and tender and almost falling off the bone. Skim any fat and serve.
