Cheese Straws

Makes about 7 1/2 dozen cheese straws

2 cups flour
1/2 cup butter, melted
1 1/2 tsp. salt
3/4 tsp. ground red pepper
1 lb. sharp Cheddar cheese, finely shredded (4 cups)

Preheat oven to 350F. In a medium bowl, combine flour, melted butter, salt, and red pepper. Add cheese; mix with a pastry blender until well blended. Place dough ina cookie press filled with a 1 1/2-inch ribbon disc. Press dough in long strips onto an ungreased baking sheet. Cut strips into 3 1/2-inch lengths. Bake 8 to 9 minutes or until bottoms are lightly browned. Transfer cheese sticks to a wire rack to cool. Store in a tin.
