Spicy Roasted Peanuts Newsgroup: rec.food.cooking/Nancy Dooley Makes about 6 cups peanuts
2 Tbsp. vegetable oil 4 cloves garlic, minced 1 Tbsp. crushed red pepper flakes 2 cans (16 oz. each) salted peanuts 2 tsp. paprika 1 tsp. chili powder
Preheat oven to 350 degrees. In a heavy large skillet, cook oil, garlic, and red pepper flakes over medium heat about 1 minute. Remove from heat. Add peanuts and stir until well blended. Pour peanut mixture onto a baking sheet. Stirring occasionally, bake about 20 minutes or until lightly browned. Sprinkle paprika and chili powder over peanuts and stir. Allow peanuts to cool completely. Store in airtight container.
