Pumkin Nut Bread (bread machine)
Newsgroup: rec.food.cooking/Laurie Duhamel

This is from the recipe book that came with my West Bend breadmaker. It's very good with a hearty soup or stew.

1 lb. loaf
6 oz evaporated milk
1/3 cup canned pumpkin
2 cups bread flour
2-1/2 tbsp whole wheat flour
1/3 c ground (or coarsely chopped) nuts
1-1/2 tbsp brown sugar
1-2 tsp pumpkin pie spice (combination of cinnamon, nutmeg & cloves)
1 tsp salt
1-1/2 tbsp butter, cut into 4 pieces
1-1/2 tsp active dry yeast
OR
1 tsp 1-1/2 tsp fast rise yeast

1 1/2 lb. loaf
9 oz evaporated milk
1/2 cup canned pumpkin
3 cups bread flour
1/4 cup whole wheat flour
1/2 cup ground (or coarsely chopped) nuts
2 tbsp brown sugar
2-3 tsp pumpkin pie spice (combination of cinnamon, nutmeg & cloves)
1-1/2 tsp salt
2 tbsp butter, cut into 4 pieces
2 tsp active dry yeast
OR
1-1/2 tsp fast rise yeast

Add to machine according to manufacturer's directions. Set on Basic setting (I use the light crust setting, especially for the smaller loaf).
