Key Lime Cookies
Makes 3 dozen
1/2 cup butter
1 cup sugar
1 egg
1 egg yolk
1 tsp baking powder
1 1/2 cups flour
1 tsp salt
1/4 cup key lime juice
1 1/2 tsp lime peel
1/2 cup confectioners sugar
Preheat oven to 350F. Line baking sheets with parchment paper.
In large bowl, cream butter sugar. Add egg and egg yolk until creamy. Mix in the flour, baking powder and salt. Add lime juice and lime peel.
Form dough into 1/2-inch balls. Place on prepared cookie sheet and bake until lightly browned, about 8 minutes. Remove to wire rack. While still warm, sift confectioners sugar over cookies.
