No-Cook Fondant

Makes 100 pieces

2/3 cup soft unsalted butter
2/3 cup light corn syrup
1/2 tsp. salt
About 1 tsp. vanilla extract or use and flavor you like
2 pounds confectioners' sugar
About 100 pecan halves or candied cherries or a combination

Line 2 large baking sheets or trays with waxed paper, set aside. In a large bowl combine butter, corn syrup, salt and flavoring. Stir with a wooden spoon, gradually working in the sugar. When mixture is too stiff for a spoon, begin kneading as for bread dough. When all the sugar has been added, continue kneading until fondant is smooth. Form into balls 3/4-inches in diameter and place on wax paper lined trays. If desired, dip into melted chocolate or roll the balls in finely chopped nuts. Press a pecan half or candied cherry on each piece. Unless the fondant is dipped in chocolate, it will dry out in a few hours.
