Peanut Crinkles (Cookie Press Cookies)

Yield: 6 dozen
1/2 cup peanut butter
1/4 cup shortening
1/2 cup brown sugar, firmly packed
1/2 cup granulated sugar
1 egg, beaten
3/4 cup + 2 Tbsp. sifted cake flour
1 tsp. baking soda
1/4 tsp. salt
Cream peanut butter and shortening until soft. Add sugars gradually, continuing to beat until light and fluffy. Add egg; beat well. Sift flour, soda, and salt together; ad in 3 additions. Beat well after each addition. Chill dough 10 minutes.
Pack into cookie press, press into desired shapes onto an ungreased cookie sheet. Bake 8 to 10 minutes at 400 degrees F.
