Chicken Margherita ala George Foreman Grill
Newsgroup posting/suzi cream cheese

I used to like the Pizza Margherita at Carraba's Italian Grill, so I experimented with the same flavors and came up with this recipe.

boneless skinless chicken breasts
fresh whole basil
plum tomato slices
fresh Mozzarella
dab of Fontina cheese
olive oil
salt and pepper

Brush the chicken breasts with olive oil and season with salt and pepper.
Grill on the GFG for about 5 minutes (depends on thickness).
On each breast, add a layer of basil leaves and then a layer of tomato slices.
Grill for another minute.
Top with the mozzarella and a dab of fontina.
Prop the grill open so that the cheese doesn't stick ( I use a popsicle stick) and continue grilling until the cheese is melted.
