Oat Bran Muffin Mix

Makes enough for four batches (40 muffins)

4 cups oat bran
4 cups all-purpose flour
3 cups rolled oats
3 cups raisins
2 cups brown sugar (packed)
1 cup chopped dried apricots
1/4 cup baking powder
4 tsp. cinnamon
2 tsp. salt

In large bowl or airtight container, thoroughly combine oat bran, flour, rolled oats, raisins, sugar, apricots, baking powder, cinnamon and salt. Store in cool dry place for up to 4 weeks.

One batch muffins:

3 1/2 cups oat bran muffin mix
1 egg
1 1/4 cups milk
1/4 cup butter, melted
3 tbsp. coarsely grated orange rind.

To Make One Batch:

Measure muffin mix into large bowl. In separate bowl, beat egg; stir in milk, butter and orange rind.

Stir into muffin mix just until combined. Spoon into large greased or paper lined muffin cups, filling to top.

Bake in 375 F. oven for about 25 minutes, or until tops are firm to the touch. Makes about 10 muffins.
