Vodka Sauce for Pasta rec.food.cooking/Liam
1 tbs. olive oil 2 tbsp. butter 1/2 cup minced onion 1 cup chopped tomatoes 1/4 cup heavy cream 2 tsp. cracked pepper 1 tsp. salt 1/4 cup vodka Parmesan
Cook pasta. Meanwhile, heat oil and butter in a large skillet until butter melts. Add the onion and saute until tender but not brown. Add tomatoes, cook and stir over medium heat until they soften. Add the cream, black pepper and salt. Cook and stir over medium heat for 1 minute, then add the vodka. Stir until sauce thickens slightly, about 2 minutes. Drain pasta and add sauce. Toss to mix. Serve with grated Parmesan.
