Double Chocolate Muffins

Here is a recipe I downloaded a couple of years ago. I have made it with mint chips and raspberry chips, too and all have been popular! This is a moist, almost cake-like chocolate muffin for all the choco-holics like myself out there!

1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsweetened orange juice
1/3 cup water
3 tablespoons vegetable oil
1 tablespoon vinegar
1 teaspoon vanilla
1/3 cup semisweet chocolate mini chips
1 teaspoon powdered sugar

Preheat oven to 375 degrees.

In a medium bowl, combine flour, sugar, cocoa, soda, and salt; make a well in the center.

In another bowl, combine orange juice, water, oil, vinegar, and vanilla. Add to dry ingredients, stirring just until moistened. Fold in chocolate chips.

Spoon in lined muffin cups (12 large), filling 2/3 full. Bake for 12 minutes. Remove from pan immediately and dust with powdered sugar.
