Banana Chocolate Chip Muffins rec.food.recipes/Katherine Salter
These have become a standard in my household - a dozen disappears very quickly!
1 cup white sugar 1/2 cup vegetable oil 2 eggs 3 medium bananas 3 tbsp. sour cream 1 tsp. baking soda 2 cups all-purpose flour 1/2 cup chocolate chips
Preheat oven to 400 deg. Fahrenheit. With electric mixer, beat sugar and oil. Add eggs, then bananas. Beat thoroughly.
Dissolve soda in sour cream. Turn mixer to low speed and slowly add sour cream mixture to banana mixture.
Sift in flour and stir gently until just blended. Mix in chocolate chips.
Fill greased muffins cups -- to the top. This recipe makes large muffins. Bake for 20 - 25 minutes. |
