Stewed Green Beans: Serves 8
2 lbs. fresh green beans 1/2 c. olive oil 2 (6 oz.) cans tomato paste 1 large onion.chopped 2 tsp. minced fresh mint leaves or 1/2 tsp.(heaping) dried mint 1 tsp.garlic powder salt & pepper to taste
Saute beans in oil till bright green & tender. Stir in remaining ingredients & add enough water to cover beans. Simmer till cooked to desired preference.
