Tomato-Corn Rarebit Serves 6
2 tsp.chopped onion 1&1/2 Tbls.butter 3 Tbls.flour 1 c.canned tomatoes(do not drain) 1 c.drained canned corn 1/2 tsp.salt 1/2 -lb.pkg.processed cheese,shredded 6-8 slices toast or double saltines
Saute onion in butter till onion is soft.Blend in flour,add tomatoes,corn & salt.Cook slowly for 10 minutes.Add cheese & cook over low heat,stirring often till cheese is melted completely.(Too high a heat will curdle it.) Serve on saltine crackers or toast points. |
