Mixed Vegetable Casserole: Serves 6
1 (10 oz.) pkg. frozen peas 1 (10 oz.) pkg.frozen lima beans 1 c. chopped celery 1 c. pared & sliced carrots 1/3 c. butter 1/3 c. flour 3 c. milk 1 1/2 tsp. salt 1/2 tsp. paprika 1/2 tsp. dry mustard 2 Tbls. butter 1 1/2 c. cracker crumbs
Cook frozen veggies in one pot,celery & carrots in another,till almost tender.Drain & reserve.Melt 1/3 cup butter in saucepan.Add flour & blend,then stirring constantly,gradually add milk & stir till thickened.
Add salt,paprika & dry mustard.Melt 2 Tbls. butter & mix with with crumbs in a bowl.Turn veggies into a 2 quart buttered baking dish.Pour white sauce over & top with buttered crumbs.Bake in a 375 degree oven for 20 minutes or till bubbling around edges. |
