PINK LADY PIE
"Raspberries, orange juice, marshmallows and whipped cream - delicate flavor and rich texture."
FOR THE CRUST: 1 1/2 cups finely crushed vanilla wafers 1/4 cup (1/2 stick) butter, softened FOR THE FILLING: 3/4 cup orange juice 1/4 cup sugar 3/4 lb.marshmallows 1 1/2 cups heavy (whipping) cream, whipped 1 (10 oz.) pkg. frozen raspberries, thawed
TO MAKE THE CRUST: Blend vanilla wafer crumbs, butter and sugar together. Press firmly into a (9 inch) pie plate.
Bake in a 375 degree F oven for 5 minutes. Cool and chill.
TO MAKE THE FILLING: Heat orange juice and sugar in a double boiler; add marshmallows and stir till melted. Cool mixture and then chill in refrigerator till partially set.
Fold in whipped cream, then raspberries. Pour filling into chilled crumb crust.
To serve, top with extra whipped cream and several raspberries, if desired.
