Pink Lady Pie Raspberries,orange juice,marshmallows & whipped cream--delicate flavor & rich texture. Serves 8
1&1/2 c.finely crushed vanilla wafers 1/4 c.softened butter 1/4 c.sugar 3/4 c.orange juice 3/4 lb.marshmallows 1&1/2 c.heavy cream,whipped 1 10 oz.pkg.frozen raspberries,thawed
Blend vanilla wafers,butter & sugar together & press firmly into a 9 inch pie plate.Bake in a 375 F. degree oven for 5 minutes.Cool & chill.
Heat orange juice in a double boiler,add marshmallows & stir till melted.Cool mixture & chill in refigerator till partially set.Fold in whipped cream,then raspberries.Pour filling into chilled crumb crust.Top with extra whipped cream several raspberries if desired. |
