Strawberry Crumb Pie: Serves 6-8 (Serve either warm or cool with cream.)
3 pts. fresh strawberries,hulled & halved 1/4 c. white sugar 1/4 c. cornstarch 1 1/3 c. sifted flour 1/2 tsp. salt 1/2 c. shortening 2-3 Tbls. water 1/4 c. brown sugar 1/2 tsp. cinnamon cream
Combine strawberries,white sugar & cornstarch & let stand while you make the pastry.Combine flour & salt in bowl.Cut in shortening till uniform but coarse.Set aside about 2/3 cup of mixture.Sprinkle water over remainder,toss with a fork & press into a ball.On lightly floured surface,roll out pastry 1&1/2 inch larger than an inverted 9 inch pie plate.
Fit into pie plate & trim 1/2 inch beyond plate edge.Fold under to make double thickness around the edge & flute so that edge is high.Fill pastry shell with strawberry mixture.Blend reserved flour mixture with brown sugar & cinnamon.Sprinkle crumbs over strawberries.Bake in 400 degree F. oven on a sheet of aluminum foil for 45 minutes or till crust is nicely browned.Pass cream with pie. |
