Wild Blueberry Pie: Serves 8
1 unbaked 9" pastry shell & pastry for lattice crust top 3/4 c.sugar 3&1/2 Tbls.quick-cooking tapioca 1/4 tsp.salt 1/2 tsp.cinnamon 1/4 tsp.cloves 1 Tbls.lemon juice 4 c.fresh wild blueberries or frozen berries,thawed 1 Tbls. butter 2 Tbls.melted butter 2 Tbls.sugar
Combine sugar,tapioca,salt & spices.Mix with lemon juice & blueberries.
Turn into a 9" pie plate lined with unbaked pastry.Dot with 1 Tbls.butter.Top with lattice crust.Brush with melted butter & sprinkle with sugar.
Cover edges with foil to prevent burning & bake at 450 degrees F. for 30 minutes.Remove foil & bake 10 minutes longer or till crust is browned. |
