Easy Egg and Tomato Benedict Serves 4-8 (The sauce-mayonnaise, milk, lemon juice, basil & pepper-is a very acceptable substitute for Hollandaise & easily made.)
2 medium tomatoes 1/2 c. mayonnaise 1/4 c. milk 1/2 tsp. lemon juice 1/4 tsp. basil dash pepper 4 English Muffins, split & toasted salt 8 eggs, poached & drained
Cut each tomato into 4 slices & set aside. In a small saucepan, combine mayonnaise, milk, lemon juice, basil & pepper. Heat till hot. Keep warm. Cover each muffin half with a tomato slice. Sprinkle lightly with salt. Top with poached egg & pour over sauce.
