Cherry Coffee Cake Serves 9 (Pretty & cheery-really more like a cake than a bread, great with coffee!)
1 3/4 c. flour 1 c. sugar 1 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt 1/2 c. plus 2 Tbsp. butter 1/2 c. milk 1 egg 1 tsp. vanilla 1/4 tsp. lemon extract 1 (21-oz) can cherry pie filling
Grease & flour 9-inch square baking pan. Sift together 1 1/4 c. flour, 1/2 c. sugar, baking powder, baking soda & salt. Add 1/2 c. butter, milk, egg & vanilla & beat till well mixed.
Turn into the prepared baking pan, spreading batter evenly.
In a small bowl combine 1/2 cup flour, 1/2 c. sugar & 2 Tbsp. butter till mixture is like coarse crumbs. Sprinkle half on top of batter.
Stir lemon extract into pie filling. Spread over crumbs on batter. Sprinkle rest of crumb mixture over top.
Bake for 1 hour at 350 degrees or till top is light golden. Cut into squares.
