Orange Bow Knots Yield: Makes about 24 (Excellent coffee rolls & sells great at bake sales.)
1 yeast cake 1/4 c. warm water 1 c. milk, scalded 1/2 c. shortening 1/3 c. sugar 1 tsp. salt 5-5 1/2 c. sifted flour 2 eggs, well beaten 1/4 c. orange juice 2 Tbsp. grated orange rind
Soften yeast in warm water. Combine milk, shortening, sugar & salt. Cool to lukewarm. Stir in about 2 c. flour & beat well. Add eggs. Stir in yeast, orange juice, rind & remaining flour. Mix well. Cover & let rest for 10 minutes. Knead on lightly floured board. Place in greased bowl & let rise in warm place till doubled.
Punch down dough, cover & let rest 10 minutes. Roll dough out to 1/2-inch thickness. Cut in 10 strips, 1/2 inch wide. Tie each strip in a knot. Arrange on a greased baking sheet. Cover & let rise till doubled. Bake in 400 degree oven for 12-15 minutes. Spread with Orange Topping(see below).
Orange Topping:
Combine 2 Tbsp. orange juice, 1 tsp. grated orange rind & 1 c. powdered sugar. Blend well.
