Brunch Wild Rice:
1/2 c.uncooked wild rice 1 tsp.salt 4 slices bacon,diced 1/2 c.celery,sliced salt to taste 1/4 c.salted cashews 4 c.water 1/4 c.butter 1 small onion,finely chopped 1/2 c.sliced mushrooms,coarsley chopped 1/4 tsp.pepper
Place rice,water & salt in a saucepan.Bring to a boil.Reduce heat, cover,let simmer, 45 minutes or till tender.
Uncover & fluff with a fork.Simmer 5 additional minutes.Drain any liquid.
Fry bacon till crisp,drain on paper towels,after bacon has cooled,crumble into small pieces.
In a skillet,melt butter & saute onions,celery & mushrooms till tender.Add rice & seasonings.Heat thoroughly.
Just before serving, top with cashews & crumbled bacon pieces.
