Quick and Easy Beer Batter

This is a much-used camping recipe. It works well on onion rings but really shines on seafood, particularly clams and scallops:

1 cup complete pancake mix (the kind where you only add the water)
1 cup beer of your choice
Optional - 1/2 tsp chili powder, garlic powder, or cayenne powder for spice if desired

Mix well to remove any lumps; may be moistened to the desired consistency with additional beer.. Can be scaled up per your requirements. Works well in either deep fat or a frying pan.
