Bake your cake in a deep dish pizza pan. Pipe a thick light brown line around the inside edge of the pan (crust). Then spread about an inch of red icing inside that (tomato sauce). Finish icing the rest of the cake with off the Buttercream Icing (cheese). Remember to make it thick so there is plenty of icing on the cake.
Use the following Royal Meringue Icing recipe to make slices of peppers, onions and pepperoni a day or two ahead of time. They will air dry to a hard "candy" like substance. Top your "pizza" with these topping and it looks very athentic!
Royal Meringue Icing Makes 3 cups (Dries very hard so use for flowers etc. not for icing cakes)
3 level Tbls. meringue powder 4 cups sifted confectioners sugar 5-6 Tbls. water
Beat all ingredients at low speed for 7-10 minutes (10-12 minutes at high speed for a portable mixer) until icing forms peaks. Color as needed.
I recommend this icing for icing the cake:
Buttercream Icing Makes 3 1/2 cups
1/2 cup shortening 1/2 cup margarine 1 1/2 tsp. clear vanilla 5 cups confectioners sugar 2-3 Tbls. milk
Cream butter and shortening then add vanilla. Add sugar a cup at a time beating on medium speed. Add milk 1 Tbls. at a time and beat on high until fluffy. |
