Oyster Po' Boy

My husband was born in Lousiana and he loved myoyster po-boy here is the recipe.

1/3 cup cornmeal
1/3 cup breadcrumbs
1/2 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. red and black pepper
2 tbsp. low fat buttermilk
1 egg white
2 (10 ounce) containers fresh oysters (drained)
vegetable cooking spray
1 (1 lb.) loaf french bread
mayo (can be low fat)
thinly sliced lettuce
24 tomato slices

Combine cornmeal, breadcrumbs, garlic powder, salt, and red and black pepper in a bowl, stir well.

Combine buttermilk and egg white and stir well.

Dip oysters in this mixture and dredge in corn meal mixture.

Coat a large skillet with cooking spray and place on medium heat till hot, add oysters and cook 3 minutes on each side till browned.

Place on bread with garnishes. This will serve eight people.
