Creamy Blue Cheese Dressing
Source: Dallas Morning News, Food section, 1-22-97
Makes about 8 servings

4 oz blue cheese
1 cup cottage cheese
4 oz cream cheese; at room temperature
1 lemon juiced
1/4 cup salad oil
salt to taste

In a large mixing bowl, break up the blue cheese; add the cottage cheese and cream cheese. Add the lemon juice and the salad oil and a dash of salt; thoroughly blend.

Serve over mixed greens.
