Florida-style Bananas Foster
2 Tablespoons unsalted butter 2 tablespoons fresh orange juice 1 tablespoon fresh lemon juice 1/2 cup packed brown sugar 2 tablespoons banana-flavored liqueur 2 tablespoons brandy 4 bananas peeled, cut diagonally into 2-inch slices

Melt butter in large noncorrosive skillet over medium heat. When foam subsides, stir in orange juice, lemon juice and brown sugar. Heat to simmering: simmer until mixture bubbles and coats a metal spoon, about 3 minutes. Add banana liqueur; ignite carefully with a long kitchen match. When flames are extinguished, add brandy; carefully flame again with a long match. When flames are extiguished, add bananas. Toss to coat with syrup. Spoon bananas and sauce over ice cream in large bowls; serve immediately. 4 servings |
