Lime Scallion Vinaigrette Recipe by :Webb Collings Servings : 4
1/4 cup fresh lime juice 3 scallions -- sliced 1 tablespoon dijon mustard 2 tablespoons honey 1/2 cup extra virgin olive oil -- or more if needed Salt and pepper -- to taste
Combine juice, scallions, honey, and mustard in a blender or food processor and blend until smooth. Add the olive oil and blend until emulsified. Season with salt and pepper, to taste.
