Tuna Patties
rec.food.cooking/Nancy Howells (2002)

1 can tuna (6 or 6.5 ounces)
1 egg
1/4 - 1/2 cup fine bread crumbs
2 tsp. dried dill
1/4 cup minced onion
1 clove garlic, crushed
Salt and pepper to taste (you can add cayenne if you like, or dried mustard)
oil for frying

Drain your tuna, and place in a bowl. "Fluff" tuna with a fork. Add egg, beaten; then add remaining ingredients. If it's too dry, add another egg; if too moist, add more bread crumbs. Form into patties, and fry in oil (I use olive oil) in a hot skillet until brown, being careful when you flip them.

Sauces to use with this: I made some sauces which I don't have recipes for -- but basically I made a homemade tartar sauce with a sweet pickle relish in a mix of mayonnaise and sour cream, and a mustard/dill sauce with dried dill, mustard and a bit of sour cream.

*Note: I used crushed saltines instead of breadcrumbs, and like that very much. It does change the consistency and flavor, and the proportions are different. Mess around with it a little… it's good stuff, even to my husband, who hates tuna of all varieties. I point out that if you have more than one can, you can make tuna loaf with much the same materials (a few more eggs and crumbs) and can bake it. I think the patties are much better.
