Potato Candy

1 lb. confectioners sugar
1 small potato
1 tsp. vanilla
peanut butter

boil potato & mash with fork. Add sugar and vanilla. Mix like pie dough and roll flat. Spread with peanut butter and roll up like a jelly roll. Chill. slice about 1/8" thick
